"The quality of wine, when used in moderation, is to set right the animal spirits, strengthen the stomach, purify the blood, aid perspiration, and to help with all other functions of the body and mind; these health benefits are felt more or less depending on the individual character of each wine. Consistency, colour, odour, taste, age, seve, region and year all result in notable differences."
Denis Diderot
On this illustration covering vine cultivation, different tools can be seen (hoes, spades, augers, pruning knives, etc.), grafts, several ways of tying vines to poles, a drawing of vines exposed to the Sun, a tool for crushing snails... Nowadays, the Pays de Langres has two vineyards that produce quality wine.
The Montsaugeonnais vineyard stretches across 13ha, and produces Chardonnay and Auxerrois, Pinot Noir, rosés, Blanc de Blancs, and wines aged in oak barrels. This vineyard has enjoyed endless reward and renown since its revival in the 90s. Each year, the members of the "Ordre des Chevaliers du Montsaugeonnais" ("Order of the Knights of Montsaugeonnais") meet up to feast during the Saint-Vincent Tournante wine festival, at Vaux-sous-Aubigny, Rivière-les-Fosses, Chatoillenot or Montsaugeon.
Relaunched in 1983, the Coiffy vineyard is based upon an area of 26 hectares. Its red and white wines enjoy the appellation "Vins de Pays des Coteaux de Coiffy", and come from 5 different grape varieties, offering connoisseurs a varied range of products: Gamay and Pinot Noir for the reds, and Chardonnay, Pinot Gris and Auxerrois for the whites, and a "Méthode Champenoise" Champagne.
